I have mounted several shark jaws. After the jaws are cut out of the shark, take a sharp knife and remove as much meat as you can without touching the cartilage of the jaws with your knife. Get a pot that will hold the jaws and get some water boiling. Dip the jaws in the boiling water just enough to soften the remaining meat that's on the jaws. Do not soak them in the boiling water. This takes awhile if you want to do it right, dipping then scraping. Be careful because they can become real soft and easy to break apart. Once they are scraped showing nothing but cartilage and teeth, set the jaws on a flat surface in the position you want them to dry.
